FRESH FIGATELLU

Fresh Figatellu.

Like its dry counterpart, it is a pork liver sausage, the difference being that it is not dried, so it is best cooked over a wood fire, fireplace or barbecue.

Fresh figatellu is delicious to eat in a sandwich; the juices it releases during cooking, which soak into the crumb of the bread, make this combination simply perfect.

Figatellu is also delicious with lentils or even with a good sour pulenta with chestnut flour.
